Alipus San Baltazar is crafted using Espadin agave. Don Cosme Hernandez and his son Cirilo ferment this Mezcal in aged pine casks. Their libations are creamy, jammy, and full of minerality. Though San Baltazar is the top-selling Alipús in Mexico, it is often harder to find globally.
