Alipus San Luis Mezcal


Agaves Espadin, grown in sandy soils at 4100ft, are used to make Alipus San Luis. Rocks are plentiful in the hot climate, and Don Baltazar ferments the cooked agave in 1500L pine vats, before distilling in copper. Resulting mezcals are rich, full-bodied and often boast fruity notes.
