Sombra Agave De Oaxaca Mezcal
Betts & Scholls' Richard Betts crafted Sombra as a rejection of "Vodka-izing" agave spirits. Its 100% espadín, grown in San Juan del Rio, San Juan, then replanted on Oaxaca's Sierra slopes, is made to stand out in drinks. Post-roasting in an oak-fueled stone pit for 2 days, it ferments naturally for 8 days after its tahona-crushed.
