A dried version of the poblano pepper. Flat wrinkled and brownish-black in colour and look a bit like prunes. They are about 4 inches long. 

Tasting notes chocolate or liquorice, with undertones of cherry and tobacco. Earthier than an ancho.

Uses: Commonly ground into chilli powder. Whole or ground, it’s perfect for many sauces in addition to mole.
