Derrumbes San Luis Potosi

Produced in an aged hacienda, Derrumbes San Luis Potosi mezcal is distilled from the region's wild Salmiana agave, and occasionally Crassispina. With its low yield, up to four times more agave is needed than for tequila. Crafted in the high-altitude Central Mexican Plateau, this mezcal honors its terroir; its chalky notes and vibrant flavor are products of its calcareous soils. The agave is cooked in ovens and mashed with a tahona, then fermented with wild yeast. Twice-distilled, it's bottled around 43% ABV and absent of smokiness.
