Machetazo Salmiana is crafted with wild agave Salmiana from San Luis Potosi, Mexico. It takes several years for the Salmiana agave to reach maturity in Charcas's dry climate. This mezcal is unique in that the agave isn't roasted in a traditional subterranean oven; instead, vaporization is used. Afterwards, the agave is pounded by tahona, then fermented in stone vessels and distilled in a copper bell still.
